How to make it

  • Preheat oven to 400 degrees F
  • Remove fat and membrane from livers
  • Cut livers into bite-size pieces(about the size of a marshmallow)
  • (I agree, chicken livers to marshmallows? no comparison!! LOL)
  • Marinate livers in soy sauce, garlic salt, garlic powder & worc. sauce
  • for several hours or overnite.
  • Reserve marinade
  • Cut bacon slices in half
  • Roll a bacon slice around a liver and secure with a toothpick
  • Place on cookie sheet or biscuit pan
  • Be sure pan has sides so liquid won't drip onto the oven floor!
  • Bake in 400 degree oven until bacon is crisp (about 20-30 minutes)
  • Brush livers with marinade several times during baking.

    I'm looking for my mother's favorite liver dish; it was chicken livers marinated in soy sauce, lime juice & we think rum. It was served with it's own gravy & toast points. How would you recomend cooking them? I'm going to try to wing it on the marinade proportions.
