Shrimp Veronique Recipe
This recipe is from the Cove Hotel... I have not tried this.... Its from my Bay Leaves cookbook...

Ingredients
  • 2 cups shrimp, cooked and cleaned
  • 3 tablespoons white wine
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1 can cream of mushroom soup
  • 3 tablespoons butter
  • 1 teaspoon curry powder
  • 1/4 cup fresh, green, seedless grapes
  • 4 tablespoons sour cream
  • 1 teaspoon lemon juice
  • dash of pepper
  • 3/4 cup fresh mushrooms, chopped

Directions
  1. Melt butter in a saucepan.
  2. Add onions, mushtooms, garlic, salt and pepper.
  3. Cook until onions are clear but not brown.
  4. Add soup, curry, grapes, sour cream, lemon juice, and wine.
  5. Stir.
  6. Add shrimp, mixing well.
  7. Serve as a casserole or in individual baking shells.
  8. Note: I serve this with French cut green beans which have been finely chopped and mixed with 2 cups cooked rice.
