No Bake Ultra Light Cheesecake

- 1 stick butter or margarine shopping list
- 1 1/4 cup graham cracker crumbs, or more shopping list
- 1-3oz package lemon JELL-O shopping list
- 1-8oz package cream cheese shopping list
- 1 cup sugar shopping list
- 1-13oz can evaporated milk, well chilled shopping list
- 1 cup boiling water shopping list
How to make it
- Chill can of milk, unopened, in refrigerator for 6 hours, or preferably overnight.
- Melt butter, and toast graham cracker crumbs in skillet
- Line bottom of 8 x 10 inch pan with half of toasted graham cracker crumbs
- IN BOWL #1
- Add one cup boiling water to gelatin and chill until thick but not set!!
- IN BOWL #2
- Soften cream cheese and add sugar
- Mix with a fork until it can be beaten with electric mixer
- Beat slightly.
- IN BOWL #3
- Whip milk on high until stiff. about 5 minutes
- Fold whipped milk into cream cheese mixture and add stiffened JELL-O
- Beat mixture until creamy
- DON'T OVERBEAT
- Pour over graham cracker crumbs and sprinkle with remaining crumbs.
- Refrigerate one hour before serving
