Rice Pilaf with Apricots

- 1/4 cup olive oil shopping list
- 1 1/2 cups brown rice shopping list
- 1/2 cup dried apricots, slivered shopping list
- 1/2 cinnamon stick shopping list
- 8 cloves shopping list
- 4 black peppercorns shopping list
- 1/4 teaspoon cardamom shopping list
- 3 cups water shopping list
- 2 medium onion, sliced shopping list
- 1/3 cup raisins shopping list
- 1/2 cup pine nuts shopping list
How to make it
- Heat half the oil in a medium saucepan.
- Add the rice and saute for 5 minutes, stirring gently.
- Add the apricots, cinnamon stick, cloves, peppercorns, cardamom, salt and pepper (to taste), and the water.
- Bring to a boil, then cover tightly and leave to simmer for 45 minutes.
- Turn off the the heat and leave covered.
- In a medium frying pan, heat the remaining oil over medium heat.
- Fry the onions until soft and slightly browned (10 minutes).
- Stir into the rice mixture.

Love this pink. People who think they don't like rice have probuley only eaten plain white rice. Not happening.
