How to make it

  • Heat half the oil in a medium saucepan.
  • Add the rice and saute for 5 minutes, stirring gently.
  • Add the apricots, cinnamon stick, cloves, peppercorns, cardamom, salt and pepper (to taste), and the water.
  • Bring to a boil, then cover tightly and leave to simmer for 45 minutes.
  • Turn off the the heat and leave covered.
  • In a medium frying pan, heat the remaining oil over medium heat.
  • Fry the onions until soft and slightly browned (10 minutes).
  • Stir into the rice mixture.

    Love this pink. People who think they don't like rice have probuley only eaten plain white rice. Not happening.
