Crayfish Enchiladas Con Queso

- 2-3 large bell peppers (I prefer red) cut into 1/4 inch strips shopping list
- 1 large onion cut into ¼ inch strips shopping list
- 2 Tablespoons butter shopping list
- ¼-1/2 teaspoons each cayenne pepper & white pepper (depending on how much eat you like) shopping list
- 1 Teaspoon dried basil leaf shopping list
- 2 Teaspoons dried oregano leaf shopping list
- 2 cups heavy cream shopping list
- 1 ½ cups sour cream shopping list
- salt to taste shopping list
- 1 package frozen crayfish meat, defrosted and drained (usually comes in 12 ounce packages) shopping list
- 1 cup shredded cheese, Mexican blend or sharp cheddar shopping list
- corn tortillas shopping list
How to make it
- In a heavy pot melt the butter over low heat then add the peppers, onions & spices
- Cook stirring occasionally until the vegetables are soft
- Add the heavy cream and cook over a low flame for approximately 15-20 minutes
- Add the sour cream and continue to cook for 15-20 minutes
- Add the crayfish and cook for another 10 minutes
- Remove the pot from heat and set aside until cool enough to handle
- With a slotted spoon, spoon a small amount into the bottom of a baking dish
- Microwave corn tortillas, six at a time for 20 seconds
- Have a cutting board or sanitized countertop ready for assembly
- Dip a tortilla into the sauce then spoon some of the mixture onto it and roll up and place into the baking dish until you have filled the pan
- Pour the remaining sauce over the top then sprinkle the top with cheese
- Bake at 350 degree oven for 20 minutes
- Garnish just before serving with small bits of sliced green onion tops
- Serves 6

I love this recipe. Yes, I will make it next week when I get some fresh lobster-Crayfish. Fresh Pacific lobster is cheaper here than canned so I just use that. A serious 5 post. Thanks.
