Crayfish Enchiladas Con Queso Recipe

Ingredients
  • 2-3 large bell peppers (I prefer red) cut into 1/4 inch strips
  • 1 large onion cut into ¼ inch strips
  • 2 Tablespoons butter
  • ¼-1/2 teaspoons each Cayenne pepper & white pepper (depending on how much eat you like)
  • 1 Teaspoon dried Basil leaf
  • 2 Teaspoons dried oregano leaf
  • 2 cups heavy cream
  • 1 ½ cups sour cream
  • Salt to taste
  • 1 package frozen crayfish meat, defrosted and drained (usually comes in 12 ounce packages)
  • 1 cup shredded cheese, Mexican blend or sharp cheddar
  • Corn tortillas

Directions
  1. In a heavy pot melt the butter over low heat then add the peppers, onions & spices
  2. Cook stirring occasionally until the vegetables are soft
  3. Add the heavy cream and cook over a low flame for approximately 15-20 minutes
  4. Add the sour cream and continue to cook for 15-20 minutes
  5. Add the crayfish and cook for another 10 minutes
  6. Remove the pot from heat and set aside until cool enough to handle
  7. With a slotted spoon, spoon a small amount into the bottom of a baking dish
  8. Microwave corn tortillas, six at a time for 20 seconds
  9. Have a cutting board or sanitized countertop ready for assembly
  10. Dip a tortilla into the sauce then spoon some of the mixture onto it and roll up and place into the baking dish until you have filled the pan
  11. Pour the remaining sauce over the top then sprinkle the top with cheese
  12. Bake at 350 degree oven for 20 minutes
  13. Garnish just before serving with small bits of sliced green onion tops
  14. Serves 6
