How to make it

  • In a heavy pot melt the butter over low heat then add the peppers, onions & spices
  • Cook stirring occasionally until the vegetables are soft
  • Add the heavy cream and cook over a low flame for approximately 15-20 minutes
  • Add the sour cream and continue to cook for 15-20 minutes
  • Add the crayfish and cook for another 10 minutes
  • Remove the pot from heat and set aside until cool enough to handle
  • With a slotted spoon, spoon a small amount into the bottom of a baking dish
  • Microwave corn tortillas, six at a time for 20 seconds
  • Have a cutting board or sanitized countertop ready for assembly
  • Dip a tortilla into the sauce then spoon some of the mixture onto it and roll up and place into the baking dish until you have filled the pan
  • Pour the remaining sauce over the top then sprinkle the top with cheese
  • Bake at 350 degree oven for 20 minutes
  • Garnish just before serving with small bits of sliced green onion tops
  • Serves 6

    I love this recipe. Yes, I will make it next week when I get some fresh lobster-Crayfish. Fresh Pacific lobster is cheaper here than canned so I just use that. A serious 5 post. Thanks.
