SOUTHERN AND SMOTHERED ONION POTATOES

- 1/2 CUP oil shopping list
- 8-10 potatoes (RED OR WHITE) shopping list
- 1 LARGE yellow onion (DICED) shopping list
- salt shopping list
- black pepper shopping list
- PREFERABLY A CAST IRON SKILLET OR NON STICK shopping list
How to make it
- PEEL POTATOES AND RINSE TO CLEAN
- CUT INTO SEMI THICK FRY CUTS
- ADD BLACK PEPPER
- HEAT OIL IN SKILLET
- ADD POTATOES TO SKILLET
- LET FRY ON MEDIUM HIGH HEAT FOR ABOUT 10 MINUTES
- ADD LID
- COOK FOR ABOUT 10 MINUTES
- ADD ONION
- AND TURN POTATOES
- REPLACE LID
- COOK FOR ABOUT 10 MORE MINUTES UNTIL POTATOES START TO SMOTHER DOWN
- TAKE LID OFF AND LET POTATOES BROWN SOME
- DO NOT LET POTATOES STICK (IF YOU ARE USING A GOOD SKILLET, THIS SHOULD NOT BE A PROBLEM).
- WHEN POTATOES ARE DONE ADD SALT TO TASTE
- POTATOES ARE DONE WHEN VERY TENDER
- DURING THE COOKING PROCESS, YOU CAN TURN THE HEAT UP OR DOWN IF NEEDED
- YOUR POTATOES SHOULD LOOK LIKE MY PICTURE
- WHEN DONE CAN TOP WITH DICED GREEN ONIONS OR YOU CAN COOK WITH GREEN ONIONS.

This recipe takes me back. My mom used to make potatoes like these for breakfast on weekends along with country sausage or ham,grits and eggs. Thanks for the reminder. :)

I sliced Yukon gold, added various seasonings (garlic, onion, paprika, black pepper, salt) as I realized I didn't have any onions. BUT your recipe totally reminded me of my mom's who is from N. Carolina. Thanks so much for the memories and for my mom...more
