Ingredients
  • 3 eggs
  • 3/4 cup vegetable oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups shredded zucchini
  • 1 8-ounce can crushed pineapple, drained
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1-1/2 teaspoons cinnamon
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon nutmeg
  • 1 cup chopped nuts
  • 1 cup raisins
  • 1 cup shredded coconut

Directions
  1. Mix first six ingredients together.
  2. Sift together flour, soda, salt, cinnamon, baking powder, and nutmeg.
  3. Add remaining ingredients.
  4. Mix all together.
  5. Pour into two 4"x8" well-greased loaf pans and bake in preheated 350* oven for 1 hour.
  6. Makes 2 loaves.

My boyfriend has been telling me he loves zucchini bread with pineapple in it! I'd never heard of it, so I am so glad to find your recipe! I'll be making it soon! Thanks for sharing!


Forgot to drain the pineapple. Didn't have raisins, so used dried sweetened whole cranberries. Tried to give the loaves extra lift by beating the eggs in with the oil then adding the sugar, before mixing the wet with the dry ingredients. Got the order wrong and mixed the oil with the sugar first and then added the eggs. Thought I put the oven on preheat but actually set the timer. Now I'm having to preheat the oven again (actually for the first time) while the batter sets in the loaf pans. BOY what a day! Time to get back in bed and start all over again.


Even with all my screw-ups, the bread turned out fantastic. Will bonus you some pics. Thank you for the recipe.
