A very fruity zucchini (Courgette )bread. Just one of many variations of this bread to use up all those extra zucc's we have left over at the end of the growing season.

Forgot to drain the pineapple. Didn't have raisins, so used dried sweetened whole cranberries. Tried to give the loaves extra lift by beating the eggs in with the oil then adding the sugar, before mixing the wet with the dry ingredients. Got the order wrong and mixed the oil with the sugar first and then added the eggs. Thought I put the oven on preheat but actually set the timer. Now I'm having to preheat the oven again (actually for the first time) while the batter sets in the loaf pans. BOY what a day! Time to get back in bed and start all over again.
