Not Another Pasta E Fagioli

- 1 lb ground beef shopping list
- 1 small onion, chopped shopping list
- 1 large carrot, julienned (1 cup) shopping list
- 3 stalks celery, chopped (1 cup) shopping list
- 3 cloves garlic, minced shopping list
- 2 14.5 oz cans diced tomatoes shopping list
- 1 15oz can red kidney beans, with liquid shopping list
- 1 15 oz can canelli beans shopping list
- 1 15 oz can tomato sauce shopping list
- 1 12 oz can V-8 juice shopping list
- 1 T white vinegar shopping list
- 1 1/2 t salt shopping list
- 1 t oregano shopping list
- 1 t basil shopping list
- 1/2 t pepper shopping list
- pinch red pepper flakes shopping list
- 1/2 t thyme shopping list
- 1/2 lb ditali pasta, cooked, al dente shopping list
How to make it
- Brown ground beef in large pot over med heat. Drain off fat. Add onion, carrot, celery and garlic and saute for 10 minutes.
- Add remaining ingredients except pasta and simmer for 1 hour.
- Add the pasta to the soup. Simmer an additional 5 to 10 minutes and serve.
- Grate fresh parmesan over individual bowls, serve with hot garlic bread and a green salad.

I just happen to have half a bag of gluten-free ditalini. I know what I'm making for dinner on Saturday! And the temp's going down so it will be good soup weather. (Hope that's the last of THAT until fall...come on Spring!)
