I know, I know there are loads of recipes for this but I swear this tastes EXACTLY like Olive Garden's

Ingredients
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 large carrot, julienned (1 cup)
  • 3 stalks celery, chopped (1 cup)
  • 3 cloves garlic, minced
  • 2 14.5 oz cans diced tomatoes
  • 1 15oz can red kidney beans, with liquid
  • 1 15 oz can canelli beans
  • 1 15 oz can tomato sauce
  • 1 12 oz can V-8 juice
  • 1 T white vinegar
  • 1 1/2 t salt
  • 1 t oregano
  • 1 t basil
  • 1/2 t pepper
  • pinch red pepper flakes
  • 1/2 t thyme
  • 1/2 lb ditali pasta, cooked, al dente

Directions
  1. Brown ground beef in large pot over med heat. Drain off fat. Add onion, carrot, celery and garlic and saute for 10 minutes.
  2. Add remaining ingredients except pasta and simmer for 1 hour.
  3. Add the pasta to the soup. Simmer an additional 5 to 10 minutes and serve.
  4. Grate fresh parmesan over individual bowls, serve with hot garlic bread and a green salad.
  5. Fantastico!!

I just happen to have half a bag of gluten-free ditalini. I know what I'm making for dinner on Saturday! And the temp's going down so it will be good soup weather. (Hope that's the last of THAT until fall...come on Spring!)
