How to make it

  • Remove dry skin and stem
  • Working from the top, core the onion generously, leaving a cavity 1 inch across and *almost* through the onion
  • Salt and pepper the cavity
  • Then fill cavity with unsalted butter
  • Salt and pepper the entire onion (Lots of pepper here)
  • Wrap each onion in foil making a twist at the top
  • Cook in a closed grill for 1-1/2 hours over a steady medium fire
  • Open foil 10 minutes before serving, and leave on the grill
  • This will be a scrumptious smoked onion

    what a great recipe... can't wait for it to be warm enough to pull out the grill...I'm one of those that doesn't grill in the cold!!
