Dried Fruit Oat Bars

- 1/2 cup chopped Medjool dates shopping list
- 1/3 cup chopped dried apricots shopping list
- 1/4 cup dried cranberries shopping list
- 1 1/2 cups water shopping list
- 1 cup maple syrup, divided shopping list
- 3/4 cup water shopping list
- 1 1/2 cups oatmeal shopping list
- 1 cup quinoa flakes (optional, swap with more oatmeal if necessary) shopping list
- 1 1/2 cups whole wheat flour shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp baking soda shopping list
How to make it
- Preheat oven to 350F.
- Combine dried fruits, water and 1/4 cup of maple syrup in a pot.
- Heat, stirring, until thickened - 5-7 minutes. Cool slightly.
- Combine remaining syrup and water, stir into remaining ingredients.
- Press half of the oat mixture into the bottom of a lightly greased 13x9" pan with lightly moistened hands.
- Spread the fruit filling overtop the crust.
- Crumble the remaining crust ingredients overtop the fruit.
- Bake 25 minutes. Cut while still warm.
