Ingredients

How to make it

  • In heavy-bottomed sauce pan, saute onions in corn oil until they begin to brown.
  • Add garlic and cook another 2 minutes
  • Stir flour in with onions and garlic so that it thickens
  • Add chopped chilies, chicken broth and salt and mix well
  • Bring to a boil and simmer 20 to 30 minutes to allow mixture to reduce
  • The sauce should be thick enough to bind chilies and onions together
  • Sauce can be refrigerated for three days, or frozen.
  • 4 Cups (approximately)

    Good lord, I made this in litres & dished out samples to EVERYBODY!!!! Just added a tbsp coriander powder, pepper & 100ml white wine vin as a tangy preservative ;) I don't think I'll EVER purchase a btl of sauce to replace this....it's THAT GOOD!!!!
    Oh yes & I toasted/burnt roasted the chillies myself for that smoky flavour. 10/5

    omg, my boyfriend thought he'd died and gone to heaven when I made this sauce for him! He was drooling! He actually thought it was better than Chuys - which he loves! I am going to HEB to get more Hatch chilis while in season (they roast them for you) and make more and freeze it! Thanks for the recipe! It's definitely a keeper!

    I used the hot variety of Hatch chile's, freshly roasted at HEB this morning. This is exactly like the sauce at Chuy's. Excellent on steak burrito's, stacked chicken enchilladas, and blended into white rice - just use it sparingly unless you know what you're getting into!
