Caramel Nut Twisted Sweet Potato Coffee Cake

- *****CARAMEL TOPPING*********** shopping list
- 1/3 cup butter or margarine shopping list
- 1/2 cup packed brown sugar shopping list
- 1/4 cup corn syrup shopping list
- 1/2 cup chopped pecans shopping list
- **********DOUGH******************* shopping list
- 2 1/2 cups baking mix shopping list
- 2/3 cup mashed cooked fresh or canned sweet potatoes shopping list
- 1/3 cup milk shopping list
- 2 tablespoons butter or margarine - softened shopping list
- 3 tablespoons brown sugar shopping list
How to make it
- Heat oven to 400 degrees F
- **TO MAKE TOPPING**
- Melt butter in an ungreased 9 inch square baking pan in oven.
- Stir in brown sugar and corn syrup.
- Sprinkle with pecans
- ***TO MAKE DOUGH***
- In a bowl, stir baking mix, sweet potatoes and milk until dough forms
- Place dough on surface dusted wih baking mix.
- Knead lightly 10 times.
- Roll or pat into 12" square.
- Spread butter over dough
- Sprinkle with brown sugar
- Fold dough into thirds; press edges together to seal
- Cut crosswise into 1 inch strips
- Twist edges of strips into opposite directions
- Arrange twists on pecans in pan
- Bake at 400 degrees F for 25-30 minutes or until golden brown
- Immediately turn pan upside down onto heat proof serving plate
- Leave pan over cake for 1 minute.
- Remove pan and serve warm
- Enjoy this with some ice cream!
