Caramel Nut Twisted Sweet Potato Coffee Cake Recipe

Ingredients

*****CARAMEL TOPPING***********

1/3 cup butter or margarine

1/2 cup packed brown sugar

1/4 cup corn syrup

1/2 cup chopped pecans

**********DOUGH*******************

2 1/2 cups baking mix

2/3 cup mashed cooked fresh or canned sweet potatoes

1/3 cup milk

2 tablespoons butter or margarine - softened

3 tablespoons brown sugar

Directions

Heat oven to 400 degrees F

**TO MAKE TOPPING**

Melt butter in an ungreased 9 inch square baking pan in oven.

Stir in brown sugar and corn syrup.

Sprinkle with pecans

***TO MAKE DOUGH***

In a bowl, stir baking mix, sweet potatoes and milk until dough forms

Place dough on surface dusted wih baking mix.

Knead lightly 10 times.

Roll or pat into 12" square.

Spread butter over dough

Sprinkle with brown sugar

Fold dough into thirds; press edges together to seal

Cut crosswise into 1 inch strips

Twist edges of strips into opposite directions

Arrange twists on pecans in pan

Bake at 400 degrees F for 25-30 minutes or until golden brown

Immediately turn pan upside down onto heat proof serving plate

Leave pan over cake for 1 minute.

Remove pan and serve warm

Enjoy this with some ice cream!
