Creamy Basil Pesto Recipe
This recipe for creamy pesto was given to me by my mom's Italian friend years ago. I grow my own basil each summer and look forward to making this each summer. It freezes well also.

Ingredients
  • 2 cups of cleaned basil leaves
  • 1 clove of garlic
  • 1/8 tsp salt (or to taste)
  • 1/2 cup extra virgin olive oil
  • 1/4 or a bit more grated parmesan cheese
  • 3 tablespoons pine nuts

Directions
  1. blender or food processor
  2. drop in clove of garlic
  3. add pine nuts
  4. some olive oil
  5. some basil leaves
  6. more olive oil
  7. salt
  8. parmesan cheese
  9. layer the above (it blends easier)
  10. start mixer/ processor and blend until creamy (30 seconds or so)
  11. add a little more olive oil if needed
  12. remember this freezes well..

Thanks Raelene.. u gotta give it a try. I'm so excited. The basil I have started from seed is about 4 inches high already... almost time for planting... woo hoo Pesto in 2 to 3 months...


I sure hope this is the pesto you mentioned in your recipe for pesto baked salmon cause that salmon recipe sounds so good & I want to make it soon. 5 forks
