Split Pea Soup With Shitake And Morel Mushroom Stock Recipe

Ingredients
  • 2 large Spring Onions chopped
  • 1 cup of celery chopped
  • 1 1/2 cups carrots sliced thin
  • 1/4 teaspoon fresh ground black pepper
  • 4 tablespoons parsley
  • 4 tablespoons Jalapeño pepper for garnish
  • One 15 oz package of green split peas
  • 1packages of dried organic Morel mushrooms
  • 1 package of organic dried Shitake mushrooms
  • 2 quarts of water
  • 1 1/2 teaspoon of sea salt
  • 1/4 teaspoon of turmeric

Directions
  1. In a pot add the Mushrooms and bring to a boil
  2. Drain the broth through a strainer and set the mushrooms aside.
  3. Add the Turmeric, sea salt and the nutritional yeast to a pot and bring to a simmer. Add the rest of the ingredients except for the Jalapeño.
  4. Cook for 2 hours on low heat stirring often.
  5. Ladle into a bowl and garnish of minced Jalapeño or parsley
  6. ** Note, when replacing chicken broth use herbs associated with chicken, for me I add some Sage or sometimes Rosemary
