Split Pea Soup With Shitake And Morel Mushroom Stock

- 2 large spring onions chopped shopping list
- 1 cup of celery chopped shopping list
- 1 1/2 cups carrots sliced thin shopping list
- 1/4 teaspoon fresh ground black pepper shopping list
- 4 tablespoons parsley shopping list
- 4 tablespoons Jalapeño pepper for garnish shopping list
- One 15 oz package of green split peas shopping list
- 1packages of dried organic Morel mushrooms shopping list
- 1 package of organic dried Shitake mushrooms shopping list
- 2 quarts of water shopping list
- 1 1/2 teaspoon of sea salt shopping list
- 1/4 teaspoon of turmeric shopping list
How to make it
- In a pot add the Mushrooms and bring to a boil
- Drain the broth through a strainer and set the mushrooms aside.
- Add the Turmeric, sea salt and the nutritional yeast to a pot and bring to a simmer. Add the rest of the ingredients except for the Jalapeño.
- Cook for 2 hours on low heat stirring often.
- Ladle into a bowl and garnish of minced Jalapeño or parsley
- ** Note, when replacing chicken broth use herbs associated with chicken, for me I add some Sage or sometimes Rosemary
