Turkey Asparagus Brunch Bake Recipe

Ingredients
  • 1 pound fresh Asparagus Spears or cut Broccoli
  • 1 pound uncooked ground Turkey
  • 1 cup chopped Onions
  • 1/2 cup chopped Red Sweet Pepper
  • 3 Eggs
  • 2 cups Milk
  • 1 cup All-Purpose Flour
  • 1/4 cup grated Parmesan cheese
  • 1 tsp. Lemon-Pepper seasoning
  • 1/2 tsp. dried Tarragon, Basil, or Thyme, crushed
  • 1 cup shredded Swiss cheese (4 oz.)

Directions
  1. Grease a 3-quart rectangular baking dish; set aside.
  2. Wash and scrape off scales from asparagus spears.
  3. Break off and discard woody bases from asparagus.
  4. Cut asparagus into 1 1/2-inch pieces.
  5. In a covered medium saucepan cook asparagus in a small amount of boiling water about 4 minutes or until crisp-tender.
  6. Drain and set aside.
  7. In a large skillet cook turkey, onions, and sweet pepper until vegetables are just tender and no pink remains in turkey.
  8. Remove from heat.
  9. Drain off fat.
  10. Arrange meat mixture in prepared baking dish; top with cooked asparagus.
  11. In a large mixing bowl combine eggs, milk, flour, Parmesan cheese, lemon-pepper seasoning, and tarragon.
  12. Beat until smooth with a wire whisk.
  13. Pour egg mixture evenly over layers in baking dish.
  14. Bake, uncovered, in a 425 degree oven about 20 minutes or until knife inserted near center comes out clean.
  15. Sprinkle with the Swiss cheese.
  16. Bake for 3 to 5 minutes more or until cheese is melted.
