Turkey Asparagus Brunch Bake

- 1 pound fresh asparagus spears or cut broccoli shopping list
- 1 pound uncooked ground turkey shopping list
- 1 cup chopped onions shopping list
- 1/2 cup chopped red sweet pepper shopping list
- 3 eggs shopping list
- 2 cups milk shopping list
- 1 cup all-purpose flour shopping list
- 1/4 cup grated parmesan cheese shopping list
- 1 tsp. lemon-pepper seasoning shopping list
- 1/2 tsp. dried tarragon, basil, or thyme, crushed shopping list
- 1 cup shredded swiss cheese (4 oz.) shopping list
How to make it
- Grease a 3-quart rectangular baking dish; set aside.
- Wash and scrape off scales from asparagus spears.
- Break off and discard woody bases from asparagus.
- Cut asparagus into 1 1/2-inch pieces.
- In a covered medium saucepan cook asparagus in a small amount of boiling water about 4 minutes or until crisp-tender.
- Drain and set aside.
- In a large skillet cook turkey, onions, and sweet pepper until vegetables are just tender and no pink remains in turkey.
- Remove from heat.
- Drain off fat.
- Arrange meat mixture in prepared baking dish; top with cooked asparagus.
- In a large mixing bowl combine eggs, milk, flour, Parmesan cheese, lemon-pepper seasoning, and tarragon.
- Beat until smooth with a wire whisk.
- Pour egg mixture evenly over layers in baking dish.
- Bake, uncovered, in a 425 degree oven about 20 minutes or until knife inserted near center comes out clean.
- Sprinkle with the Swiss cheese.
- Bake for 3 to 5 minutes more or until cheese is melted.
