Coffee-crusted Pork Chops With Bourbon Cream Sauce Recipe

It's grilling time and this is one of the first I'm doing for the season. The chops are grilled and the rub is what gives the pork the wonderful flavor and the cream sauce is just a great big ole bonus!

  • Sauce:
  • 1 Tab. butter
  • 1/4 cup finely chopped yellow onion
  • 1 tea. minced garlic
  • 1/4 cup bourbon
  • 1 cup beef stock
  • 6 Tbs. heavy cream
  • 1 tea. finely chopped thyme
  • Kosher salt
  • ground pepper
  • Rub:
  • 1 tea. finely ground dark-roasted coffee
  • 1 tea. finely chopped thyme
  • 1 tea. kosher salt
  • 1/2 tea. ground pepper
  • 4 boneless pork loin chops about 1" thick
  • Extra virgin olive oil

Directions
  1. Make sauce: In medium saucepan over medium-high heat, melt butter.
  2. Add onion and cook until tender, about 3 minutes stirring occasionally to prevent browning.
  3. Add the garlic and cook for 1 minute more, stirring occasionally
  4. Remove pan from heat, carefull add the bourbon, and return to the heat.
  5. Reduce heat to medium and add the beef stock and cream. Simmer until about 1/3 cup remains (15-20 min.),stirring occasionally. Add thyme. Season with salt and pepper to taste.
  6. Make rub: In a small bowl, mix the rub ingredients with fingers.
  7. Chops:
  8. Allow chops to stand at room temp for 20-30 minutes before grilling. Lightly brush or spray both sides of the chops with oil and season evenly with the rub. Press the spices into the meat.
  9. Grill: Direct medium heat until barely pink in the center (8-10 min.)
  10. turning once. Remove from grill and let rest 3-5 minutes. Bring sauce to simmer and serve over chops
