Coffee-crusted Pork Chops With Bourbon Cream Sauce

- Sauce: shopping list
- 1 Tab. butter shopping list
- 1/4 cup finely chopped yellow onion shopping list
- 1 tea. minced garlic shopping list
- 1/4 cup bourbon shopping list
- 1 cup beef stock shopping list
- 6 Tbs. heavy cream shopping list
- 1 tea. finely chopped thyme shopping list
- kosher salt shopping list
- ground pepper shopping list
- Rub: shopping list
- 1 tea. finely ground dark-roasted coffee shopping list
- 1 tea. finely chopped thyme shopping list
- 1 tea. kosher salt shopping list
- 1/2 tea. ground pepper shopping list
- 4 boneless pork loin chops about 1" thick shopping list
- extra virgin olive oil shopping list
How to make it
- Make sauce: In medium saucepan over medium-high heat, melt butter.
- Add onion and cook until tender, about 3 minutes stirring occasionally to prevent browning.
- Add the garlic and cook for 1 minute more, stirring occasionally
- Remove pan from heat, carefull add the bourbon, and return to the heat.
- Reduce heat to medium and add the beef stock and cream. Simmer until about 1/3 cup remains (15-20 min.),stirring occasionally. Add thyme. Season with salt and pepper to taste.
- Make rub: In a small bowl, mix the rub ingredients with fingers.
- Chops:
- Allow chops to stand at room temp for 20-30 minutes before grilling. Lightly brush or spray both sides of the chops with oil and season evenly with the rub. Press the spices into the meat.
- Grill: Direct medium heat until barely pink in the center (8-10 min.)
- turning once. Remove from grill and let rest 3-5 minutes. Bring sauce to simmer and serve over chops
