How to make it

  • In large bowl, with mixer, cream shortening, butter, and sugar
  • Add eggs, one at a time, beating thoroughly after each addition
  • Place flour, baking powder in bowl, whisk together
  • Add 1 spoonful at a time, alternately with milk to creamed mixture
  • Add vanilla
  • Stir in crushed pineapple and juice, blend well
  • Pour batter into well greased 10 inch tube pan
  • Place in COLD oven
  • Turn oven on to 325 degrees and bake for 1-1/2 hours or until top springs back when touched lightly
  • Let stand for a few minutes
  • Run knife around edges, remove carefully to a wire rack or plate
  • GLAZE
  • Combine butter, powdered sugar, and 1 cup drained pinapple in bowl
  • Blend well
  • Pour over cake while still hot

    I used a "fresh" pineapple a friend had bought at the store for me. Prepping that was the hardest part, and my processor "crushed" the chunks nicely. Thing is though, my problem it isn't specified what shelf to use in the oven. After 1 1/4 hours, it "looked" done (dark golden brown on the top), even using the toothpick method (It came out clean). I have various cake recipes that use different levels in the oven.

    But, when I let it sit, then turned it on my cake rack, it almost fell through it, lol. The edges tasted great but the center is really "soggy", just not happy about wasting the 6 eggs and the pineapple.

    I WILL try this again though, as what we did get from it was great!

    OMG, I LOVE this site! I had the Southern Living CAKES cookbook (lost it or loaned it out/never got it back...something!) and this was a favorite recipe (right up there with the Cream Cheese Pound Cake).

    Delicious & moist; also qualifies as a Pina Colada Cake if you mix coconut & a splash of rum to the glaze, and some cherries as garnish.

    Printed out to make. I like unusual recipes and this qualifies by starting with a cold oven. Kinda like the recipe I did where it required pouring water on the cobbler after cooking! Cool, thanks for the post. Pictures and prints at 11. JJ
