Lime Ceviche With Tequila

- 3 limes, juiced shopping list
- 1 large lemon, juiced shopping list
- 1 and 1/2 cups tequila shopping list
- Handful mint leaves shopping list
- 24 ounces ahi tuna, sea bass, red snapper, any firm-fleshed fish of your choice, cut in small cubes shopping list
- 4 tomatillos, diced (or 1/2 cup of salsa verde sauce) shopping list
- 4 tomato skins, outer flesh only, diced (no seeds!) shopping list
- 1 red onion, diced shopping list
- 1 large sweet onion, diced shopping list
- 2 jalapeño peppers, diced shopping list
- » Garnish: shopping list
- Chopped mint and cilantro leaves, lime slices, mixed greens shopping list
- Optional: diced or sliced avocado shopping list
- corn chips-Ceviche makes a wonderful "dip" shopping list
How to make it
- Combine lime juice and tequila in saucepan. Bring to a simmer; remove from heat.
- Add the mint leaves and cool 1 hour.
- Remove mint leaves and pour liquid directly over the raw fish.
- Refrigerate for an hour, stirring to mix after 30 minutes and continue to chill. (The acid from the lime and lemon juice will cook the fish!)
- Drain liquid.
- Combine fish with diced vegetables.
- Mix well and serve!
- *You can serve this in cocktail glasses with greens of your choice or on top of mixed greens.
