Artichoke Crab Bites Recipe
I love artichoke bottoms--you can get them in cans and also love crab. I kind of combine the great flavors of artichoke dip with the crab

Ingredients
  • 24 (3 cans) drained artichoke bottoms
  • 1 cup Best Foods Mayonnaise
  • 1 cup Fresh grated romano cheese
  • juice of one lemon and zest
  • 1 lb cleaned crab meat

Directions
  1. Place the artichoke bottoms on a cookie sheet and preheat the oven to 350. I like to use parchment paper so if anything bubbles over they are easy to remove.
  2. Mix the mayonnaise, cheese, juice and zest in a mixing bowl. Stir lightly to blend. Gently add the crab meat, making sure you have no shell at all. Place about 1 tbs of this mixture onto each artichoke bottom and place in the hot oven and bake for about 10 minutes until hot and bubbly. Eat at once.
  3. This is elegant enough to serve at any cocktail party or holiday dinner.
