How to make it

  • Place the artichoke bottoms on a cookie sheet and preheat the oven to 350. I like to use parchment paper so if anything bubbles over they are easy to remove.
  • Mix the mayonnaise, cheese, juice and zest in a mixing bowl. Stir lightly to blend. Gently add the crab meat, making sure you have no shell at all. Place about 1 tbs of this mixture onto each artichoke bottom and place in the hot oven and bake for about 10 minutes until hot and bubbly. Eat at once.
  • This is elegant enough to serve at any cocktail party or holiday dinner.
