My Dad came up with this recipe years ago. It has been a staple in our family ever since.
ETC...Egg, Tomato, Cheese

Ingredients
- -Eggs
- -Tomato slices..in season is the best
- -Cheese slices..Your favorite
- -Bread...Your favorite
- -Mayo
- -S & P
Directions
- - Toast bread if desired. Meanwhile, fry eggs to your liking.
- -Slice Tomatoes. Coat bread with mayo.
- -Place cheese on eggs and melt.
- -Place egg on bread, top w/ tomato, add S&P, top w/ bread slice.
- The Original ETC Sandwich is served on white bread, un-toasted, and the eggs are sunny-side up. It is messy but GREAT!

LOL Sas. Enjoy. I can't wait till this weekend. I am going to have what may be my last ETC. for the season. I only make them w/ garden tomatoes, and we are getting a frost any day now! Maybe I'll go over to my Dad's house and make him one too.
