LAVISH CREAMED SPINACH
This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Tinsley Estate in Venus, Texas in 1987.

Ingredients
- 1/2 cup butter
- 1/4 cup flour
- 2-1/2 cups heavy cream
- 1/2 cup Parmesan cheese
- 1/4 teaspoon grated nutmeg
- 1 bag fresh spinach washed and stems removed
Directions
- Melt butter then add flour and brown slightly.
- Add cream slowly stirring until thick then add cheese and nutmeg.
- Stir until blended then add spinach and continue stirring until spinach melts.

Made this side dish when i had tons of company. everyone LOVED it. to tell the truth there was a little left and i ate it first thing in the morning before anybody else found it. i'm making it again now and forgot in the rush last time that i did'nt tell you how truly great this is.... reminds me of creamed spinach al la cart at many fancy steak resturant's like "ruth chris"s
