If you love mango and salmon and want to impress, Try this spectacular recipe. Use as a main dish or as an appetizer

Ingredients
- 4 pieces of fresh salmon filet ( about 1 lb )
- 16 pieces of phyllo pastry sheets
- 1 stick melted butter or margarine
- Mango curry sauce:
- 1 large ripe mango, coarse chopped
- 1/2 cup mayonnaise, maybe a bit more if desired
- 2 tsp curry powder or to taste
- 1/2 cup toasted chopped walnuts ( optional )
Directions
- Make the mango curry sauce by combining ingredients and chill well.
- To prepare salmon: salt and pepper pieces.
- Lay 2 sheets of phyllo on flat surface and brush with melted butter.
- Add 2 more sheets and brush with melted butter.
- Place 1/4 of mango mixture in middle of phyllo several inches up from bottom edge.
- Place on salmon. Fold ( roll ) phyllo over salmon and tuck under edges.
- Repeat for 3 more servings.
- Place salmon pastries into a buttered baking pan and brush tops of pastry with more melted butter.
- Bake 400F about 25 minutes or until pastry is golden.
- Makes 4 main dish servings or cut each in half for 8 appetizers servings
