How to make it

  • Make the mango curry sauce by combining ingredients and chill well.
  • To prepare salmon: salt and pepper pieces.
  • Lay 2 sheets of phyllo on flat surface and brush with melted butter.
  • Add 2 more sheets and brush with melted butter.
  • Place 1/4 of mango mixture in middle of phyllo several inches up from bottom edge.
  • Place on salmon. Fold ( roll ) phyllo over salmon and tuck under edges.
  • Repeat for 3 more servings.
  • Place salmon pastries into a buttered baking pan and brush tops of pastry with more melted butter.
  • Bake 400F about 25 minutes or until pastry is golden.
  • Makes 4 main dish servings or cut each in half for 8 appetizers servings
