I didn't make it for a long time after my mother develped an allergy to corn, but one day I had a flash of brilliance I substituted cream of wheat for the corn. It tastes great! Ingredients

1 lb. ground beef

1 lg. onion, diced

1 can diced tomatoes

1 tbs. taco seasoning

1/2 tsp. chili powder or cayenne

2 tsp. salt

1/2 tsp. black pepper

1 cup milk

1/2 cup cornmeal OR cream of wheat

1 can olives, drained

2 cups cheddar cheese, grated

Directions

Mix cream of wheat (or cornmeal) with milk and set aside. Brown ground beef in skillet and drain. Add onion and cook until tender. Add tomatoes and seasonings. Stir in cream of wheat (or cornmeal) and milk. Stir in cheese until melted. Add in olives. Pour into 13x9 casserole dish. Top with rest of cheese. Bake at 325 degrees for about 45 minutes until cheese is melted and casserole firm.
