Roasted Red Snapper With Lemon Parsley Crumbs Recipe
I put this together last night and it was AMAZING. I'd wanted to cook this with halibut or cod but my store was out so I went with red snapper, feel free to use any fish with this dish. I ate it with edamame and rice!!

Ingredients
  • 1 cup Panko
  • 3 tbsp melted butter
  • 3 tbsp chopped parsley
  • 2 tsp lemon zest, plus rest of lemon
  • salt and pepper
  • 1 large red snapper fillet (enough to fed four)

Directions
  1. Preheat oven to 425, with the rack in the middle
  2. In a bowl combine panko, butter, parsley, lemon zest, salt and pepper.
  3. Stir to combine
  4. Oil a rimmed baking sheet (or use parchment paper)
  5. Season fish with salt and pepper
  6. Place panko topping all over the top of fish and bake for 10-12 minutes
  7. Throw under the broiler for about 30 seconds to really crisp up the top.
  8. Squeeze lemon juice over the top.
