How to make it

  • Place the squash into a large pot and cover with water.
  • Add the sea salt and bring to a boil
  • In the mean time place the figs and the raisins into a small pot and cover with water and cover.
  • Bring it to a boil for 30 minutes.
  • Place the cooked figs and raisins into a food blender and add 1 cup of the cooking liquid and blend until smooth, thin out with more water if necessary, and blend until it is smooth as velvet.
  • Drain squash, add the butter, Brown sugar and add salt to taste.
  • Plate a scoop of squash and few tablespoons of the Fig and raisin sauce or more if you want along one side.
  • Enjoy
