Butternut Squash With Fig And Raisin Sauce

- Two pounds of butternut squash peeled and seeds removed, cut up into 2 inch pieces. shopping list
- 1 cup of dried figs shopping list
- 1-cup raisins shopping list
- 1-tablespoon sea salt shopping list
- 1 ½ teaspoons of cinnamon shopping list
- 3 Tablespoons of brown sugar shopping list
- ½-teaspoon ground cloves shopping list
- 4 tablespoons of unsalted sweet butter shopping list
How to make it
- Place the squash into a large pot and cover with water.
- Add the sea salt and bring to a boil
- In the mean time place the figs and the raisins into a small pot and cover with water and cover.
- Bring it to a boil for 30 minutes.
- Place the cooked figs and raisins into a food blender and add 1 cup of the cooking liquid and blend until smooth, thin out with more water if necessary, and blend until it is smooth as velvet.
- Drain squash, add the butter, Brown sugar and add salt to taste.
- Plate a scoop of squash and few tablespoons of the Fig and raisin sauce or more if you want along one side.
- Enjoy
