Coconut-cardamom Tapioca With Golden Raisins

Coconut tapioca, golden raisins with a touch of cardamom.
Ingredients
- 1/3 cup sugar shopping list
- 3 Tbsp "minute" tapioca shopping list
- 1 14 oz can coconut milk shopping list
- 1 cup milk shopping list
- 1 egg, well beaten shopping list
- 1/2 tsp ground cardamom* (or more, to taste) shopping list
- 1 tsp vanilla shopping list
How to make it
- Mix sugar, tapioca, coconut milk, milk, raisins and egg in medium saucepan; let stand 5 minutes (DON'T skip this step).
- Cook on medium heat, stirring constantly, until mixture comes to a FULL boil (a boil that doesn't stop bubbling when stirred. This will take longer than you really think it should. DON'T try to speed it up by turning the heat to high.) Remove from heat; stir in cardamom and vanilla.
- Cool 20 minutes, then serve warm or refrigerate to serve cold. Yum!

Oh my this sounds fantastic. I was just looking at a coconut tapioca yesterday, but it wasn't made with coconut milk!! This is a keeper and will be made really soon!! Thx Julie!! X0
