Coconut-cardamom Tapioca With Golden Raisins

- 1/3 cup sugar shopping list
- 3 Tbsp "minute" tapioca shopping list
- 1 14 oz can coconut milk shopping list
- 1 cup milk shopping list
- 1 egg, well beaten shopping list
- 1/2 tsp ground cardamom* (or more, to taste) shopping list
- 1 tsp vanilla shopping list
How to make it
- Mix sugar, tapioca, coconut milk, milk, raisins and egg in medium saucepan; let stand 5 minutes (DON'T skip this step).
- Cook on medium heat, stirring constantly, until mixture comes to a FULL boil (a boil that doesn't stop bubbling when stirred. This will take longer than you really think it should. DON'T try to speed it up by turning the heat to high.) Remove from heat; stir in cardamom and vanilla.
- Cool 20 minutes, then serve warm or refrigerate to serve cold. Yum!

Hey Julie,HELP!!! I started to set everything out for this and couldn't find anything about the golden raisins.Ha! Ha! It's nice to know I'm not the only one to skip over something.I'll be waiting with my tongue hanging out.Cheers.....Bob
