Nonnas Potatoes Recipe
My grandmother used to make these when I was a kid, and they are SOOO good. They're easy to make, but take awhile to cook. They're worth the wait, though! And they make a great side dish for chicken, beef or pork.

Ingredients
  • 9 medium red potatoes
  • Extra virgin olive oil
  • Basil
  • Oregano
  • Black Pepper
  • Garlic Powder
  • Parsley
  • Grated Locatelli Cheese

Directions
  1. Preheat oven to 375 degrees.
  2. Slice the potatoes as thin as possible, leaving the skin on, and arrange in a 13x9 (or larger) pan.
  3. Pour the olive oil over the potatoes, once or twice around the pan.
  4. Sprinkle basil, oregano, pepper, garlic powder, parsely and locatelli cheese over the potatooes, seasoning to taste.
  5. With your hands, mix the potatoes, oil, cheese and seasonings until all the potatoes are thoroughly coated.
  6. Cover with foil and cook for an hour and 15 min at 375 degrees.
  7. After an hour and 15 min, remove the foil, and sprinkle more of the seasoning and cheese on the potatoes.
  8. Set oven to broil and put the potatoes in the broiler, for 10 to 15 minutes depending on how crispy you like them.
