I love an easy prepared but elegant dinner...this is one of those! :)

Ingredients
  • 3 Cornish hens
  • 1/2 c. champagne
  • 2 tbsp. melted butter
  • Salt & pepper to taste
  • stuffing mix of your choice

Directions
  1. Preheat oven to 500 degrees.
  2. Stuff Cornish hens.
  3. Place hens in a roasting pan.
  4. Brush hens with butter and season with salt and pepper.
  5. Roast for 10 minutes.
  6. Reduce oven to 400 degrees.
  7. Pour champagne over hens and continue roasting, basting frequently for 45 minutes (or until juices run clear when a thigh is pricked).
  8. Serve....:)
