Ingredients
  • 1/2 lb hamburger
  • 1 egg, slightly beaten
  • 2 Tbsp breadcrumbs
  • 1 Tsbp grated parmesan cheese
  • 1/2 tsp basil
  • 1/2 tsp onion powder
  • 5 3/4 cups chicken broth
  • 2 cups spinach (frozen works)
  • 1/2 cup uncooked orzo
  • 1/3 cup finely chopped carrots
  • more grated parmesan

Directions
  1. combine meat, egg, breadcrumbs, 1 Tsbp parmesan, basil and onion powder.
  2. shape into 3/4" balls
  3. heat broth to boiling
  4. stir in spinach, orzo, carrots and meatballs
  5. return to boil
  6. reduce heat
  7. cook (slow boil) until orzo is tender - about 10 minutes
  8. stir frequently
  9. serve with more parmesan on top
