Candied Bacon Recipe

Ingredients

4 slices peppered bacon

1/2 cup sugar or brown sugar, do not pack the brown sugar

1/2 cup water

Directions

Cook the bacon until almost crispy.

Drain drippings.

Pat with paper towel.

Cut eachslice in half and set aside.

In a heavy sauce pan, add sugar and water.

Stir until smooth.

Cook at medium-high heat until sugar is lightly brown (light carmel stage) . If using brown sugar this stage is harder to see...

Remove from heat.

Place bacon on wax paper.

Using tongs, dip each slice into caramel and place on wax paper until hardened.

I have found that if I am just making these for bacon bits that I can use that box of bacon ends and pieces from the store, add some pepper if you want and do the same thing that way. Also I must admit to doing the double dip in the syrup. I wait until the bacon dries and then dip them one more time....What can I say! I love sweet and salty. I also prefer the brown sugar, but its really just a matter of taste.
