Barbecue Chicken in Kaffir Lime Leaves

- 10 bamboo skewers shopping list
- 400 grams chicken thigh fillets chopped into cubes shopping list
- 1 tsp vegetable oil shopping list
- 1 tbsn galangal finely chopped shopping list
- 1 tbsn lemon grass finely chopped shopping list
- 1 tbsn garlic finely chopped shopping list
- 2 tsp chilli finely chopped shopping list
- 1 green onion finely chopped shopping list
- 1/2 tsp Chinese five spice powder shopping list
- 1 tbsn fish sauce shopping list
- 2 tsp brown sugar shopping list
- 1 tsp salt shopping list
- 1 tsp black pepper shopping list
- 40 kaffir lime leaves (about 2 packets) shopping list
- lime wedges to serve shopping list
How to make it
- Soak skewers in cold water for at least 15 minutes.
- Marinate chicken in oil, galangal, lemon grass, garlic, chilli, green onion, five-spice, fish sauce, brown sugar, salt, pepper and 5 lime leaves, finely chopped.
- Let stand for 15 minutes or for several hours.
- Preheat barbecue or grill pan to a medium-high heat.
- Skewer chicken cubes between whole lime leaves, placing four pieces on each skewer.
- Cook chicken skewers on barbecue, turning every 2 minutes until done.
- Serve with lime wedges.
