Ingredients
  • 10 Bamboo Skewers
  • 400 grams Chicken thigh fillets chopped into cubes
  • 1 tsp Vegetable oil
  • 1 tbsn Galangal finely chopped
  • 1 tbsn lemon grass finely chopped
  • 1 tbsn garlic finely chopped
  • 2 tsp chilli finely chopped
  • 1 green onion finely chopped
  • 1/2 tsp Chinese Five spice powder
  • 1 tbsn fish sauce
  • 2 tsp brown sugar
  • 1 tsp salt
  • 1 tsp black pepper
  • 40 kaffir lime leaves (about 2 packets)
  • lime wedges to serve

Directions
  1. Soak skewers in cold water for at least 15 minutes.
  2. Marinate chicken in oil, galangal, lemon grass, garlic, chilli, green onion, five-spice, fish sauce, brown sugar, salt, pepper and 5 lime leaves, finely chopped.
  3. Let stand for 15 minutes or for several hours.
  4. Preheat barbecue or grill pan to a medium-high heat.
  5. Skewer chicken cubes between whole lime leaves, placing four pieces on each skewer.
  6. Cook chicken skewers on barbecue, turning every 2 minutes until done.
  7. Serve with lime wedges.
