    Barbecue Chicken In Kaffir Lime Leaves

    Tried this last night from Cherriepie and it was a winner! Lovely flavour on the chicken itself and when you put the skewers on the BBQ the lime leaves really, really impart an amazing aroma. I only had about fifteen lime leaves. I used six boneless chicken thighs chopped up and spaced the lime leaves accordingly, like one between every two or three chicken chunks. It was totally enough!

    I don't think I would be able to get some of the ingredients...like the lime leaves or the galangal. I would have to look for those at the Asian grocery store near me...but I doubt they have them.

    I made something before that had both the lime leaves and the galangal and ended up having to order them online! It came with a ton though so I froze them and haven't used them since....this would be a great way to use some up!

    I was shocked at the amount of flavor these had! Kaffir lime leaves let off an amazing aroma when chopped up raw and when cooked. It's a flavor I can't comapare to...very exotic. I didn't wrap the leaves around the chicken but did like Janet and threaded one on about every 3 chicken pieces. Don't eat the whole lime leaves! Not very good all by themselves lol! I'm living proof that you can successfully freeze lime leaves and galangal for at least 5 yrs :) Doesn't seem like any flavor at all was lost either. Added my pic...

    I had to Google galangal. I have never heard of it. I wonder if regular ginger could be subbed? Or does it taste differently? I have a feeling I would have to be feeling pretty adventurous to try this one! I'm not sure about the lime leaves! :) That's great that it kept after five years in the freezer, too!

    Yes I think regular ginger would be great! Do you have a Whole Foods like Pleclare suggested up top? I too have seen lime leaves there, even though the one's that I have I ordered forever ago online, along with the galangal...for a probably a stupid ridiculous price...

I really really liked this recipe and had forgotten about it so thanks to you reminding me I'll shortlist it again. You could indeed sub fresh ginger in a pinch Frankieanne but galangal does have its own unique taste. The lime leaves, though very fragrant and tasty aren't 'strong' per se. I have a lovely Vietnamese Grocery store close by where I live and I can buy those ingredients cheap, cheap, cheap.
