Carne en su jugo Meet in its own juice

- 1 can of black beans shopping list
- 1 medium onion shopping list
- 1 fat bunch of cilantro shopping list
- 4 cloves of garlic shopping list
- 8 medium tomatillos shopping list
- 10 slices of bacon shopping list
- 2 lbs of top round beef steak shopping list
- water shopping list
- salt and pepper. shopping list
How to make it
- Finely chop onion and garlic, set aside.
- Finely chop cilantro including stems and set aside. leave some for garnish.
- Slice beef in small and thin slices, the thiner the better this is very important so beef is tender.
- Chop bacon very small pieces and cook in a skillet on medium high until almost crunch.
- Add beef, half of the onions, half of the cilantro half of the garlic, brown for about 3 more minutes and move to a large sauce pan or a pressure cooker.
- In a blender add tomatillos, the rest of the onion, cilantro and garlic and enough water to just cover mix until liquid.
- Add the mix to the beef and 4 spoons of the beans.
- If using the pressure cooker close and cook medium high for 20 minutes.
- If using sauce pot bring to a boil medium high then simmer medium for 30 minutes.
- To serve add 2 spoons of the remaining beans on top of each plate and garnish with cilantro.
