I love using my slow cooker but I question basting. Every time you take the lid off the slow cooker you have to increase the time. The ingredients sound wonderful.

I do one similar as well I make a foil ring to keep chicken from touching bottom and do your step one minus the h2o and it comes out like a lemony rotisserie chicken from the market!!!

I must have had one juicy chicken. Followed the recipe exactly except for the celery. None in the house. Used celery powder instead.
Started out with one cup of water in the crock pot and wound up almost having to take liquid out of the crock pot to keep it from overflowing.
Don't think a foil ring below my chicken would have helped out at all.
All that said, it was fall off the bone chicken. Good flavor.

Got all the liquid measured as I was putting away the leftovers. Minus the original cup of water, I dug out an additional 3 1/2 cups of liquid. It can't be all fat rendering.
Is the chicken processing company loading up my chicken with water? Water weighs out at approximately a half pound per cup.
