Roasted Garlic Mashed Potatoes Recipe
This is an awesome mashed potato recipe. It's easy, it always turns out great and the roasted garlic flavor really takes it to a new level. Enjoy

Ingredients
  • 8 cloves garlic
  • 1 tablespoon olive oil
  • 6 medium potatoes peeled and cut into 2" chunks
  • 1 cup half and half
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Preheat oven 400.
  2. Place unpeeled garlic on a square of aluminum foil then drizzle with oil and seal.
  3. Roast 45 minutes.
  4. Squeeze garlic out of peels and mash with fork then set aside.
  5. Place potatoes in a pan and cover with lightly salted water.
  6. Bring to a boil and simmer until tender about 15 minutes then drain well.
  7. Place back in pan and set over low heat to evaporate remaining water.
  8. Meanwhile place half and half and butter in a small saucepan.
  9. Warm over low heat until butter melts.
  10. Mash potatoes along with roasted garlic.
  11. Stir in warmed butter and half and half then season with salt and pepper.
  12. Serve immediately.
