Kicked Up Blue Cheese Spread Recipe
This is a fabulous spread with an awesome combination of flavors! Great with crusty french bread, toast points, etc. From a local cookbook.

Ingredients
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup chopped red onion
  • 1/2 cup chopped toasted walnuts ***
  • 1/4 cup pitted and coarsely chopped kalamata olives
  • 1 large clove garlic minced
  • 1/2 cup crumbled blue cheese
  • Freshly ground black pepper to taste
  • Crusty french bread
  • Seedless Red and Green Grapes

Directions
  1. In a small saucepan over medium heat, gently warm the olive oil with the onion, walnuts, olives, and garlic.
  2. Do not bring the oil to a boil.
  3. Remove from the heat and cool for a moment.
  4. Place the blue cheese in an attractive serving bowl, then pour the warm oil mixture over the cheese and stir gently.
  5. Add pepper to taste, then let the mixture cool to room temperature. To serve, spread on bread.
  6. Serve the grapes on a platter alongside the spread.
  7. Guests are always shocked at how delightfully the grapes omplement the spread.
  8. *** To toast the walnuts, spread them in a single layer on a baking sheet and toast in a 350 degree oven until lightly golden, about 4 minutes.
