Curried Butternut Squash And Walnut With Angel Hair Recipe

This is a great way for both the butternut and the walnut to stand out on their own' without the curry or cinnamon overpowering them.

Ingredients
  • 1 pound of Butternut Squash
  • 1 clove of garlic minced
  • 1/2 cup of walnut halves
  • 1/2 pound of angel hair Pasta
  • 1/4 cup of onion minced
  • 2 tablespoons of olive oil
  • 1/2 cup of white wine
  • 1 tablespoon of sunflower oil
  • 3 tablespoons of sea salt
  • a few grinds of Black pepper
  • 1/2 teaspoon of cinnamon
  • 1 tablespoon of curry powder
  • 6 quarts of cold water
  • 2 tablespoons of nutritional yeast
  • 1/4 cup of fresh grated Parmesan cheese

Directions
  1. Peal half of a small butternut squash and chop into half inch cubes
  2. smash the garlic clove with the side of your knife separate the skin and mince the garlic.
  3. Peal and mince enough onion to make for 1/4 cup
  4. In a small pot place the butternut squash and cover with water
  5. heat until it comes to a boil
  6. boil the squash for 5 minutes only.
  7. In the mean time in a separate pot with 6 quarts of water bring to a boil
  8. add the sea salt and add the Angel Hair
  9. Boil pasta for two minutes only, it will be a little on the stiff side.
  10. In a small pan start the sauce by adding the Olive oil and sunflower oil to the pan add the garlic and the walnuts and the spices cook for 5 minutes add the wine
  11. Remove the butternut squash with a slotted spoon and reserve the water
  12. Add the squash and a cup of the reserved water from the squash.
  13. Add the Angel Hair to the pan with the squash and cook for a few minutes to reduce some of the water.
  14. Plate the squash and pasta and top with some cheese.

I use some sunflower oil in place of some olive oil so the olive oil will not overpower the delicate flavor of the Squash.


This is a great recipe. I have never used nutritional yeast. What is it exactly? I want to make sure it has no bee pollen in it as I am allergic. I'm sure it doesn't, but just in case!!
