How to make it

  • Blend all ingredients except coconut in large bowl. Beat 4 minutes
  • with electric mixer. Pour into 2 greased and floured 9-inch layer
  • pans.
  • Bake at 350 for 25-30 minutes or until inserted toothpick comes
  • out clean. Cool in pan for 15 minutes, then remove to rack to
  • finish cooling.
  • Fill and frost, then sprinkle with coconut.
  • Chill. Refrigerate any leftover cake.
  • For frosting, combine all ingredients except Cool Whip, and beat
  • until blended. Fold in thawed Cool Whip.

    Hi Henrie,
    I think the only change I would make is the cook gets a wee bit of Rum too, one for the cake one for the cook...YUMMY recipe!
