Ingredients
  • 8 oz cream cheese
  • 2 pkgs. dry pina colada mix
  • 2 tablespoon white rum
  • 2 tablespoon milk
  • 2 tablespoon sugar
  • 1 1/2 cups sour cream
  • Flaked coconut for garnish

Directions
  1. Mix all ingredients except flaked coconut in order listed. Mix well
  2. after each addition, adding sour cream last. Texture should be smooth but not runny.
  3. Spoon into a dip bowl and sprinkle with flaked coconut.
  4. Serve with the following fruits as accompaniments:
  5. strawberries, melon, pineapple, peaches, grapes, etc. Slices of pound cake or angel food cake are also delicious.

Wow~what a great way to add some excitement to fruit! Sounds light and refreshing-with summer on it's way and all of the goodies coming in-I will be trying this with all of the BBQ's we will be having. Great dessert idea...thanks Henrie, as always-you rock!
