Ingredients

How to make it

  • In a large nonstick skillet coated with nonstick cooking spray, cook and stir onion until tender.
  • Add spinach; cook and stir over medium heat until heated through.
  • Reduce heat to low; stir in cream cheese and sour cream.
  • Add the artichoke hearts, Parmesan cheese, salt, pepper and red pepper flakes; cook for 1 to 2 minutes or until heated through.
  • Transfer to an ungreased 1 1/2 qt microwave safe dish; sprinkle with cheddar cheese.
  • Cover and microwave for 2 to 3 minutes or until cheese is melted.
  • Serve warm with melba toast, pita chips or other crackers.

    I NEED some low-fat after making our carrot cake, Zena - you posted this just for me, didn't you?!? I do like these lower-fat versions of the dips and apps I love so much...I've found they usually taste as good as the full-fat versions and save me some calories - I'm sure I will enjoy this lighter version, too (don't you just LOVE spinach artichoke dip?!? - I can't resist it!)...thanks, Zena~
