This is one of my all time favourite desserts! Hope you like it too. Serve it with chocolate ice cream and a sugar wafer - yummy!

Ingredients
  • 1/2 c white sugar
  • 2 tbsp cornstarch
  • 1/3 c water
  • 1/4 c orange juice
  • 1 kg bag of frozen pitted cherries
  • 1 300g jar of bing cherries
  • 1/2 tsp finely grated orange zest
  • 1/4 c brandy
  • premium vanilla ice cream

Directions
  1. Whisk together the sugar and cornstarch, water and orange juice in a wide saucepan.
  2. Bring to a boil over medium heat, whisking until thickened.
  3. Stir in the cherries and orange zest and bring to boil.
  4. Reduce heat, and simmer for 10 minutes.
  5. While the cherries are cooking, spoon the ice cream into serving bowls.
  6. Remove the cherries from the burner,stir in the brandy, and ignite with a long lighter.
  7. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.
