Chicken Parmigiano Mamas Way

- 4-6 whole skinless chicken breasts, pounded thin with a mallet shopping list
- 2 eggs, lightly beaten shopping list
- 1 teaspoon each: salt, pepper, oregano, parsley (use fresh if you have it) shopping list
- flour for dusting, I use a shaker shopping list
- 1 Tbs butter shopping list
- 1 Tbs olive oil shopping list
- 2 cups Trader Joe's Bolognese sauce or 2 Cups Home Made tomato sauce shopping list
- 1 big hunk of Smoked or Buffalo Mozzarella, sliced into 1'4" pieces shopping list
- 1/2 cup grated Real parmesan cheese shopping list
- 1 lb Bucati* pasta shopping list
How to make it
- Pound chicken lightly until 1/4-inch thick. Sprinkle with the salt and pepper and spices.
- Sprinkle with a light dusting of flour.
- Dip in eggs.
- Heat oil in a large skillet until hot. Brown chicken on both sides.
- Pour tomato sauce over the tops of the chicken breasts only.
- Top with Mozzarella. Then Parmesan.
- Turn to a slow simmer. Put on a lid and cook for 25 mins.
- Meanwhile salt and boil pasta water. And cook the Bucati* pasta until al dente...about 10 mins. Drain but do not rinse! Toss on to a pretty platter. Top with the chicken breasts and pour remaining sauce on top.
- Makes 4-6 very yummy servings.
- Bucati is a wonderful big hallow in the middle spaghetti type pasta that holds a great deal of sauce and is really satisfying to eat.
