I have been making this for over 30 years...... It started from a Progresso magazine recipe ....but of course I have tweaked the hell out of it!....A family favorite and quite fast!

Ingredients
  • 4-6 whole skinless chicken breasts, pounded thin with a mallet
  • 2 eggs, lightly beaten
  • 1 teaspoon each: salt, pepper, oregano, parsley (use fresh if you have it)
  • Flour for dusting, I use a shaker
  • 1 Tbs butter
  • 1 Tbs olive oil
  • 2 cups Trader Joe's Bolognese sauce or 2 Cups Home Made Tomato Sauce
  • 1 big hunk of Smoked or Buffalo Mozzarella, sliced into 1'4" pieces
  • 1/2 cup grated Real Parmesan cheese
  • 1 lb Bucati* pasta

Directions
  1. Pound chicken lightly until 1/4-inch thick. Sprinkle with the salt and pepper and spices.
  2. Sprinkle with a light dusting of flour.
  3. Dip in eggs.
  4. Heat oil in a large skillet until hot. Brown chicken on both sides.
  5. Pour tomato sauce over the tops of the chicken breasts only.
  6. Top with Mozzarella. Then Parmesan.
  7. Turn to a slow simmer. Put on a lid and cook for 25 mins.
  8. Meanwhile salt and boil pasta water. And cook the Bucati* pasta until al dente...about 10 mins. Drain but do not rinse! Toss on to a pretty platter. Top with the chicken breasts and pour remaining sauce on top.
  9. Makes 4-6 very yummy servings.
  10. Bucati is a wonderful big hallow in the middle spaghetti type pasta that holds a great deal of sauce and is really satisfying to eat.

If you can get smoked Mozzarella try it...it has a n upscale taste, but a good buffalo Mozzarella is always a comfort here. I hate bland Mozzarella!
