How to make it

  • CAKE
  • In a large bowl, combine boiling water, oatmeal and butter; let stand 20 minutes.
  • Add 2 eggs and beat well, by hand or with a mixer.
  • Add remaining cake ingredients and beat together well.
  • Pour batter into greased 9x13 pan.
  • Bake at 350 degrees for 35 minutes, or until you can gently press the top of the cake with your finger and the top springs back.
  • Allow cake to set on a rack for 10 minutes, then spread the topping over the top of the cake and broil until topping is bubbly and coconut begins to brown.
  • Cool completely before covering the cake.
  • Do not refrigerate.
  • TOPPING
  • Mix all ingredients together well in a medium bowl.
  • Spread topping over warm cake.
  • Broil as directed above.

    Thanks so much for posting this. Sounds like the one my Mom used to make. She will be 69 on Wensday and am going to make this for her Birthday. I asked her today how old she is going to be and she said 15. She has Dementia so cant ask her how to make it. I know she probally has the receipe but is probally in storage. I am going to make this one for her hope she remembers it.

    I never had oatmeal in cake before, muffins but not cake. I love the idea of the broiled icing/topping. I'm dying to see how it would look.

    I have made oatmeal cake before and I loved it. Oatmeal is one of my favorite things to eat. Im going to make this one as soon as I get the carrot cake calories burned off! Thanks Krum!
