How to make it

  • Preheat oven to 350
  • Line cookie sheet with parchment paper
  • In mixing bowl, cream butter with sugars until light and fluffy
  • Beat in eggs, coffee and vanilla
  • Sift flour, baking powder, and salt
  • Add oats and coconut
  • Stir into creamed mixture
  • Fold in the chocolate, butterscotch chips chopped walnuts and pecans
  • Mix well
  • Spoon the mixture by rounded tablespoonfuls, 2 inches apart, on baking sheets
  • Bake for 10 to 12 minutes or until lightly browned.

    These sound wonderful. They have a Kitchen Sink cookie at Fresh Market that is wonderful and this recipe sounds about right for them.
