baked mashed potatoes, forget your boring mashed potatoes, this is a glorified baked potato taste-bud tantalizing joy ride.
this is a diet killer just sayin!

Ingredients
- 8-10 large Idaho white potatoes
- 1 pound of sharp cheddar grated
- 4 oz of cream cheese
- 4 oz half n half
- 1 pound of smoked lean bacon
- 8 oz or frozen bell pepper mix
- 1 small red onion
- add spices to your taste
Directions
- bake the taters it adds to the flavor,
- cook the bacon crisp and crumble
- saute the peppers and onion
- peal the taters [optional]
- gently mix in all the ingredients the cream cheese will be difficult, try not to destroy the taters to much try to leave em lumpy, use a large mixing fork mix until well blended, saving 2-3 oz of cheddar
- sprinkle the cheddar over the top
- bake for 15 mins then BROIL till the top gets brown.
- this can also be used for stuffing for bell peppers,

I'm sitting here laughing this sounds so ridiculously fatteningly wonderful! Just a suggestion....to make the cream cheese easier to mix in how about using whipped cream cheese. Just a thought. FABULOUS recipe!
