Mary Macs Peach Cobbler

- PASTRY shopping list
- 1/2 cup lard or shortening shopping list
- 1 1/2 cups all purpose flour shopping list
- 1 teaspoon salt shopping list
- 1 tablespoon sugar shopping list
- 1/2 cup ice water shopping list
- peach FILLING shopping list
- 2 pounds fresh ripe peaches, peeled & sliced shopping list
- 1/2 cup sugar shopping list
- butter shopping list
How to make it
- Prepare pastry by combining 1/2 cup of the flour with lard of shortening.
- Rub together to incorporate
- Add salt and sugar to remaining flour and work into lard mixture with a tablespoon ice and water until mixture is soft but not wet.
- Dust hands with flour to handle dough.
- Chill
- Mix peaches with sugar and let rest for juices to draw out of peaches.
- Preheat oven to 350 degrees
- Roll out pastry until it is large enough to fit the top of a 12-inch long baking dish.
- Fill dish with peaches and dot with butter.
- Cover peaches with pastry and crimp sides
- Cut vent holes in pastry
- Brush top with melted butter and bake until cobbler is golden brown
- About 40 minutes
- Makes 8 - 10 servings (sounds like 1 to me!!)
