Ingredients

PASTRY

1/2 cup lard or shortening

1 1/2 cups all purpose flour

1 teaspoon salt

1 tablespoon sugar

1/2 cup ice water

PEACH FILLING

2 pounds fresh ripe peaches, peeled & sliced

1/2 cup sugar

butter

Directions

Prepare pastry by combining 1/2 cup of the flour with lard of shortening.

Rub together to incorporate

Add salt and sugar to remaining flour and work into lard mixture with a tablespoon ice and water until mixture is soft but not wet.

Dust hands with flour to handle dough.

Chill

Mix peaches with sugar and let rest for juices to draw out of peaches.

Preheat oven to 350 degrees

Roll out pastry until it is large enough to fit the top of a 12-inch long baking dish.

Fill dish with peaches and dot with butter.

Cover peaches with pastry and crimp sides

Cut vent holes in pastry

Brush top with melted butter and bake until cobbler is golden brown

About 40 minutes

Makes 8 - 10 servings (sounds like 1 to me!!)
