Mile High Pad Thai

- 1 pkg of rice noodles shopping list
- 2 Tbs peanut oil shopping list
- 2 Tbs minced garlic shopping list
- 1 cup minced onion shopping list
- 1 tbs red curry paste shopping list
- 1 Tbs fresh grated galanga shopping list
- 2 beaten eggs shopping list
- 1 Tbs lemon juice shopping list
- 5 Tbs chopped fresh sweet basil shopping list
- 1 tsp fresh grated ginger shopping list
- 3 Tbs fish sauce shopping list
- 1 tsp rice vinegar shopping list
- 1/4 tsp shrimp paste shopping list
- 1/4 cup chopped peanuts shopping list
- 3 jalipeno peppers seeded and veined and chopped shopping list
- 3 medium sized squid cut into rings shopping list
- 6 large shrimp shell removed and veined cut in half shopping list
- 1 cup small scallops (can use large cut into fourths) shopping list
- 14 oz coconut milk shopping list
How to make it
- In a wok put the peanut oil in and heat until it smokes then add the onions and saute until translucent (carefully..no grease burns)
- Add garlic
- Add shrimp cook for 3 min
- Add squid cook 3min
- Add scallops
- Add eggs and stir
- Add all the rest of ingredients and cook for 10 min
- The rice noodles I used needed to be in boiling water for 5-10 sec
- Put cooked noodles in a bowl and top with seafood sauce and enjoy!

Would you be mad at me if I left out the squid. I'm squid squeamish. Other than that, it ROCKS!

Oh my gosh... I love Pad Thai and your recipe looks amazing. I have only enjoyed Pad Thai in a restaurant and I have never prepared it at home. Now I have that opportunity. Thanks Rae, you've got my "5" forks!
