Butter Chicken Recipe
This recipe is easily made with common ingredients. Despite its name, it is not greasy or overly fattening. It has a unique flavor with a pleasant warmth. Not too hot, not too bland! Serve over a bed of Jasmine rice with a side of Kheera ka Rayta.

Ingredients
  • 3 T. butter
  • 1 lg. onion, cut into thin wedges
  • ¼ tsp. Cinnamon
  • 2 cloves garlic, minced
  • 2 tsp. Grated fresh ginger
  • ½ tsp turmeric
  • 1 tsp. Ground red chili pepper, or to taste (probably less for kids)
  • 1 T. coriander powder
  • 1 lb. Chicken breast , cubed
  • ¼ c. ground almonds
  • 2 c. chopped fresh tomatoes
  • 1 T. tomato paste
  • ½ c. yogurt or sour cream

Directions
  1. In a lg. pan, heat the butter till frothy. Add the onions and cinnamon, and saute lightly. (about 3 minutes.)
  2. When onions are soft, stir in garlic, ginger, turmeric, chili, and coriander, and saute over med. heat for one minute.
  3. Add the chicken, and saute, stirring constantly until chicken turns white.
  4. Add the almonds, tomatoes and paste. Mix thoroughly, and simmer for 20 -30 minutes.
  5. Just before serving, add the yogurt and heat gently.
