Kheera Ka Rayta Yoghurt With Cucumber And Tomato Recipe

Ingredients
  • 1 large cucumber
  • 1 Tbs. finely chopped sweet onion
  • 1 Tbs. salt
  • 1 medium tomato, chopped
  • 1 Tbs. finely chopped fresh cilantro
  • 1 c. plain yoghurt
  • 1 tsp. cumin

Directions
  1. Peel and seed the cucumber. Slice into 1/2 inch cubes.
  2. Place the cucumber, onion, and salt in a bowl and let rest for 5 minutes.
  3. Meanwhile, combine the yoghurt, cumin, and cilantro in a small bowl, mixing well.
  4. Squeeze the excess water from the cucumbers and onion, and place in a large bowl. Toss the tomatoes with the cucumbers.
  5. Pour the yoghurt over the cucumber mixture and mix gently till all pieces are coated.
  6. Chill for at least one hour.
  7. Just before serving, salt and pepper to taste.
