How to make it

  • Peel and seed the cucumber. Slice into 1/2 inch cubes.
  • Place the cucumber, onion, and salt in a bowl and let rest for 5 minutes.
  • Meanwhile, combine the yoghurt, cumin, and cilantro in a small bowl, mixing well.
  • Squeeze the excess water from the cucumbers and onion, and place in a large bowl. Toss the tomatoes with the cucumbers.
  • Pour the yoghurt over the cucumber mixture and mix gently till all pieces are coated.
  • Chill for at least one hour.
  • Just before serving, salt and pepper to taste.
