Wonderful Baked Squash Casserole Recipe
A simple and delicious squash casserole. It is always welcome at our table.

Ingredients
  • 2 cups cooked yellow squash
  • 1 cup chopped onions
  • 1 cup evaporated milk (I have used half and half)
  • 2 cups Ritz cracker crumbs
  • 1 cup shredded Cheddar cheese (I prefer mild)
  • 2 eggs, slightly beaten
  • 1/2 teaspoon salt or to taste
  • 1 teaspoon black pepper
  • 1 teaspoon sugar
  • 6 tablespoons unsalted butter, melted

Directions
  1. Drain cooked squash
  2. Place in a bowl, mash
  3. Add chopped onions
  4. Add Ritz cracker crumbs, shredded cheese
  5. Mix quickly
  6. Add 2 slightly beaten eggs, salt, pepper, sugar, and melted unsalted butter
  7. Pour into greased casserole
  8. Bake at 350 degrees for about 30-40 minutes or until set and lightly browned
