Wonderful Baked Squash Casserole Recipe

Ingredients

2 cups cooked yellow squash

1 cup chopped onions

1 cup evaporated milk (I have used half and half)

2 cups Ritz cracker crumbs

1 cup shredded Cheddar cheese (I prefer mild)

2 eggs, slightly beaten

1/2 teaspoon salt or to taste

1 teaspoon black pepper

1 teaspoon sugar

6 tablespoons unsalted butter, melted

Directions

Drain cooked squash

Place in a bowl, mash

Add chopped onions

Add Ritz cracker crumbs, shredded cheese

Mix quickly

Add 2 slightly beaten eggs, salt, pepper, sugar, and melted unsalted butter

Pour into greased casserole

Bake at 350 degrees for about 30-40 minutes or until set and lightly browned
